I’ve always had a passion for baking and cooking, and I’ve been blessed to cook with some amazing chefs as I travel around the globe shooting Let’s Shop. In fact, I spend most of my time hanging out in and around the kitchen in my home; as with most homes it is the epicenter of family and fabulous living. This holiday season is no exception. I’m busy baking holiday treats, edible gifts for family and friends and of course prepping for both Christmas and New Year’s dinners. I want to share with you a recipe that I picked up recently, that is, in my mind, absolutely brilliant. It meets all my criteria – it’s delicious, easy to make, includes healthy ingredients (at least as healthy as a sweet treat can get).

I’m calling these chocolate minty treats that taste similar to an After Eight, although I think you’ll agree after your first bite they taste even better, After RockHouse.

  • 520g dark chocolate (70% cocoa)- use the best quality chocolate you can afford
  • 160g organic coconut fat/oil, melted
  • 11 drops pure peppermint essential oil (this is the secret- use essential oil, not extract)
  • Icing sugar (confectioners’ sugar) to dust chocolates before serving

Melt chocolate in double boiler. Combine melted coconut oil and peppermint oil with chocolate, stir well to combine. Line a baking sheet with parchment paper and pour melted chocolate mixture onto the pan. Put in fridge to chill, when set, score with shape knife or pizza cutter and then break into perfect bite size pieces of heaven. Dust with icing sugar before serving.
