At Rock House Style, our mantra is fabulous living- we consider ourselves more than just interior designers, we design life: spaces designed for better living, filling you with beautiful sight lines, colours you love, textures that seduce and soothe, elegant accessories that make you feel glamorous, and stir up memories of travels, friends and family, and art that compels you to look and contemplate. We organize life so that it’s natural and convenient to dress well, cook well, entertain well and live well. Bathrooms and home gyms that leave you thinking you live at the spa and kitchens that have everyone wanting to dine at home with you. Homes that have you rushing to return back home. A home that as you open that door you gasp and exclaim “ I love my house”! Homes that feel great, look great, sleep and work beautifully. Fabulous living encompasses all elements of grace, style and elegance, it embodies an essence of life. Our wish for all of you is that you embrace fabulous living with us in 2015- this will be your most amazing year yet. Let’s resolve to be more creative and more passionate in all that we do. Let’s entertain more, pamper ourselves more, bake more, decorate more, and organize more.
I’ve always had a passion for baking and cooking, and I’ve been blessed to cook with some amazing chefs as I travel around the globe shooting Let’s Shop. In fact, I spend most of my time hanging out in and around the kitchen in my home; as with most homes it is the epicenter of family and fabulous living. This holiday season is no exception. I’m busy baking holiday treats, edible gifts for family and friends and of course prepping for both Christmas and New Year’s dinners. I want to share with you a recipe that I picked up recently, that is, in my mind, absolutely brilliant. It meets all my criteria – it’s delicious, easy to make, includes healthy ingredients (at least as healthy as a sweet treat can get).
I’m calling these chocolate minty treats that taste similar to an After Eight, although I think you’ll agree after your first bite they taste even better, After RockHouse.
- 520g dark chocolate (70% cocoa)- use the best quality chocolate you can afford
- 160g organic coconut fat/oil, melted
- 11 drops pure peppermint essential oil (this is the secret- use essential oil, not extract)
- Icing sugar (confectioners’ sugar) to dust chocolates before serving
Melt chocolate in double boiler. Combine melted coconut oil and peppermint oil with chocolate, stir well to combine. Line a baking sheet with parchment paper and pour melted chocolate mixture onto the pan. Put in fridge to chill, when set, score with shape knife or pizza cutter and then break into perfect bite size pieces of heaven. Dust with icing sugar before serving.
Happy New Year !
